beef stir-fry

the asian theme continues.

i am posting this at 2:07am and don't quite know what to say. carrots, onions, yellow bell pepper, sugar snap peas (so good), beef strips (too lean = tough, boo), ginger, garlic, chile-paste, sesame seeds, and scallions with a sauce of soy sauce, sesame oil, cider vinegar, and organge juice. and as always, s&p. on brown basmati rice.

directions:
cut all veggies (attempt to keep things in similar sizes so they cook evenly and look pretty). add a bit of oil to a hot pan, let heat for a few moments (until it begins to smoke), then add minced garlic, chile-paste, and minced/grated ginger. stir for a moment and, before garlic turns brown, add veggies (start with onions and carrots, then peppers, and finally peas, pausing for a minute between each addition). when veggies are cooked through (i like 'em still crunchy), remove them to a plate.

shit- take your beef strips out of the freezer and defrost (put container in water-- the faster you want to defrost them, the warmer the water- but let the health department find out).

shit #2- get your rice going!

next, for the beef: add a bit more oil to the pan, wait a moment, and add some more chiles and garlic. let cook, but add beef before they turn brown. cook beef until done, stirring frequently.

meanwhile: mix soy sauce, vinegar, OJ, minced ginger and sesame oil-- i have no idea on the ratios-- taste, taste, taste!

ok, so your beef is done. add your veggies back to the pan, mix everything up, and pour the sauce over it. mix again, and let the veggies reheat and the sauce cook down a bit.

serve over rice and garnish with scallions and sesame seeds.

is anybody reading this, or i am just typing cause i like it?! oh man, i have way too much time on my hands...

Yes, someone is reading this. Mainly because I saw that you had visited my blog (elisson1.blogspot.com), even if only for a moment. Surfing leaves tracks!

Hope you're enjoying Scotland (and Middlebury). I visited Middlebury with my daughter a few years ago - she ended up at BU but also spent a semester abroad (London). Have fun - but watch out for that haggis.
