split pea soup
the recent cold weather here in edinburgh has put me on the prowl for good soup (i.e., i am made 2 soups in one week). Like the lentil soup, i think this one got better once it had sat in the fridge overnight.
it's is based off of ina garten's recipe from the original barefoot contessa cookbook. however, being that ina's recipes usually make enough to serve all of middlebury college/lawton road/insert your own large number metephor here, my shrunken recipe's proportions were off, i think.
her addition of potatoes adds some heartiness to the soup, and the goat cheese crouton (grilled baguette slice, smeared in goat cheese with s/p and broiled) brought nice contrasts of crispy and creamy. like most things in life, i think it'd have been even better if a small bit of bacon was included at the begginning for more depth of flavor.
overall, a good soup for a cold day.
